Description
Inspired by a recipe in Kylee Newton's lovely book, The Modern Preserver, in this jam the heat of black pepper perfectly offsets the concentrated sweetness of pineapple.
Ingredients: fresh pineapple, sugar, lemon juice, cracked black pepper, pectin powder (pectin, dextrose), salt. Prepared with 106g pineapple and 0.3g pepper per 100g. Total sugar content 43g per 100g. Refrigerate after opening and eat within 4 weeks.
